Thyme for sale
We now have fresh thyme ready for harvest.  Thyme is a great herb for salads, soups, sauces, ragouts, pizza and roasts.  Here's a favorite at our house that uses thyme: Bean and Bacon Soup.  Note that if a recipe calls for a dried herb, I usually multiply that amount by three to get the amount of fresh herb to use.

Certified Organic

Peak City Gardens, LLC Logo

We are Now Certified Organic!
This last week we received official notice from Organic Certifiers, Inc., that we have passed the review and inspection and have been approved for USDA National Organic Program certification. That means that someone has checked our claim that we use only natural and healthy methods for growing our crops.  You'll see the organic "seal" on our advertising materials and you can be assured that we are indeed chemical and pesticide free.

The Battle of the Bugs
Since we use no chemicals to control pests, we need to be creative when fighting the battle of the bugs. To keep aphids under control, we use a combination of "weapons".  We have introduced two beneficial insects that eat aphids, we spray a bacteria on the plants that is toxic only to bugs like aphids, and when the aphids are becoming a real pain, we spray with water twice a day to knock them off and drown them.  All this to make sure that your food is clean and ready to eat!

The national organic standards address the methods, practices and substances used in producing and handling crops, livestock and processed agricultural products. The standards specify that, in general, all natural (non-synthetic) substances are allowed in organic production and all synthetic substances are prohibited. (source).

What do you do with pac choi?

Pac Choi Recipes
We had a great turnout at the Colorado Farm and Art Market on Sunday--almost 500 people came! Hope to see you there next month.  Our produce for sale included pac choi (a.k.a. bok choy) and we had a number of folks asking, "What do you do with pac choi?".  Here are 10 recipes from the folks over at thekitchn.com:

Come downtown and see us this Sunday at the Colorado Farm and Art Market.  We'll be at the Cottonwood Center for the Arts, 427 E Colorado Ave.  To get there, go East on Colorado Ave from downtown, then turn right into the parking lot just after Wahsatch Ave and before the main street curves to the left.  The Market is open from 11am to 2pm.

New Year's Resolutions

New Year's Resolutions
There is much talk this time of year about making resolutions, usually related to living better and healthier.  Gym memberships and attendance spike.  Diet plans are purchased.  New recipes are downloaded and printed.  How do we make these resolutions last past the month of January?  By making it a habit.  Get it into your regular routine so that it is the default action you take, so you do it without having to make a fresh decision each time.  We at Peak City Gardens are here to help by making it easy for our neighbors in the Colorado Springs area to buy local, healthy produce. Put in your order and your food will show up on your doorstep the next afternoon.  Or if you're out and about, stop by the warehouse and pick it up.  Tours are free and we're glad to see you!
